Protein Pancakes

Unlike most protein pancake recipes, this one does not contain protein powder. All the protein comes from cottage cheese and egg whites.

02-01-09 pancakes

  • 1/2 cup rolled oats
  • 1/2 cup cottage cheese
  • 1/2 cup egg whites (or 4 egg whites)
  • 1 tbsp ground flax
  • 1/4 tsp baking powder
  • 1 tsp vanilla extract
  • cinnamon
  • sweetener of choice (optional)

Blend all ingredients in a blender or food processor until smooth. Pour into heated and greased frying pan, cooking until browned on each side.

You can also get creative and add blueberries

Or you can dip them in a nut butter syrup

A mix of 1/4 cup table or maple syrup (I use E.D. Smith sugar-free) and 1/2 tbsp nut butter.

Why stop there? Pancake batter can also be used for waffles!

    • Hey!! Great questions ;)

      1. I get four medium-sized pancakes or two belgian-sized waffles from the recipe. 2. With the flax seed it’s 340 calories, 35g protein, 36g carbs and 6g fat. Without the flax it’s 310 calories, 34g protein, 34g carbs and 4g fat. 3. Yes, but I’ve convinced myself the extra fat in them make my pancakes fluffier. Not sure if this is true or not – they’re still tasty without :)
