Protein Cake

The protein cake is usually made up of some variation of the following ingredients:
- 30g whey protein powder (any flavour)
- 1/2 tsp baking powder
- spices, sweeteners, cocoa powder, flax, raisins, nuts, nut butter, etc.
- 2 tbsp egg whites
- 2 tbsp fruit or vegetable puree (pumpkin, applesauce, banana, or my personal favourite, baby food).
Mix it up in a large mug (it will fluff up to 5 times the size of the batter!) and microwave for 90 seconds. Top with anything from cream cheese to nut butter.
Carrot Protein Cake

- 30g (1 scoop) vanilla whey protein powder
- 1/2 tsp baking powder
- cinnamon, nutmeg, ground ginger
- 2 tbsp egg whites
- 2 tbsp carrot baby food
Topped with watered-down marshmallow fluff and sprinkles!
Chocolate Banana Protein Cake

- 30g chocolate whey protein powder
- 1/2 tsp baking powder
- 1 tbsp cocoa powder
- 1 tbsp splenda
- mini chocolate chips
- 2 tbsp egg whites
- 2 tbsp strained bananas (baby food)
Topped with peanut butter.
Sweet Potato Spiced Protein Cake

- 30g vanilla whey protein powder
- 1/2 tsp baking powder
- cinnamon, nutmeg
- raisins
- 2 tbsp egg whites
- 2 tbsp sweet potato puree (baby food)
Topped with peanut butter whisked with almond milk.






FINALLY found some freaking baking powder on campus, and have all other ingredients on hand. about to make it before zumba tonight! I am feeling very susan. :) soo excited about this protein cake, I have yet to make it.
Do you know of a vegan substitute for the egg whites? Would xantham gum or guar gum work?
Hey Amy! The only vegan substitute i know of is a mix of flax and water, but I’m not sure if that would work in the microwave, especially to fluff it up. Let me know if you find something that works! :)

Is protein powder heat stable? Or does it depend on the brand?
I’ve only tried the protein cake with whey and soy powders. Usually I’d say go with soy if heat is involved, but I actually prefer the whey for the microwave cakes. It fluffs up more and cooks faster :)
