Bowl o’ Protein

- 1/2 block extra-firm tofu, crumbled
- 1/4 cup onion, chopped
- green or red pepper, chopped
- 4 mushrooms, chopped
- spinach (optional)
- 1 tsp curry powder
- 1 tsp cumin
- 1 tsp chili powder
- 1 scrambled egg
- 1/4 cup shredded cheese
Stir-fry the tofu, veggies, and spices together (I add the spices to the greased pan first, heating them brings out the flavour/aroma more). Top stir-fry with scrambled egg and cheese. Also tastes great with salsa!
