Pumpkin Cream Cheese Waffle
HAPPY WAFFLE WEDNESDAY!!
Yes, that required all caps. Do you know how long it’s been since I last celebrated Waffle Wednesday??
Okay, so technically I ate a waffle for breakfast last Wednesday, but it was long gone before I realized what day of the week it was. They tend to all blur together these days.
But this morning I made sure to document it for you and I’ve got a winner of a “recipe” to share. This was really, really good. And I am a waffle snob.
Many of you probably already know that I am morally opposed to canned pumpkin. You guys. It’s a mashed vegetable in a can. It’s processed, it’s in a can, it’s “icky” factor is off the charts due to texture and scent.
But, you can’t deny that it’s good in some things. My favourite being the pumpkin cream cheese muffins we used to sell at Starbucks when I worked there. I’ve already made a healthier version of those, so when I found myself with leftover pumpkin in the fridge this morning, I knew it was time to make a waffle out of it.
Pumpkin Cream Cheese Waffle
Serves: 1 single lady
Ingredients:
- 1/2 cup whole wheat flour
- 1 tbsp ground flaxseed
- 2 packets stevia (equal to 4 tsp sugar)
- 1/2 tsp pumpkin pie spice
- 1 tbsp baking powder
- 1 tsp vanilla extract
- 1/4 cup pure pumpkin puree
- 1 egg
- 6 tbsp club soda (use more or less to your liking)
- 2 tbsp cream cheese
Directions:
Mix your first five dry ingredients together first, then stir in the wet ones down to the club soda. Mash the cream cheese into the batter using a fork, just enough so there are small chunks throughout.
The batter makes enough for one very large Belgian waffle (with some spillage on the sides) or two smaller Belgian waffles. Pictured above is the large one because I’m too impatient to wait for two. I also let my waffles cook close to 10 minutes for extra crispiness on the outside, but it’s even more important to do for the pumpkin ones!
I also tried to make it on the healthier side after the mass amounts of KitKats and Coffee Crunch I consumed over Halloween.
I was feeling pretty crappy yesterday when my dad came into my bedroom to see how I was doing. I told him I had a tummy ache from eating too much chocolate and he burst into laughter. I’m not sure if it’s because I’m a 25-year-old who still needs her dad to take the candy away from her, or the fact it’s such a trivial complaint given the whole cancer thing, ha.
Anyways, off to carpe diem and shit!

There’s pieces of cream cheese throughout after mashing it into the batter, so you get a little bit with every few bites. And I’m a strong believer that you can french toast anything you put your mind to ;)

OMG. Can I come over for waffle Wednesday? That looks delicious. I’ve never thought of adding club soda to batter, but it totally makes sense!

Yes! Canadian chocolate bars are far superior to their American counterparts. We have like three times as many flavours in gas stations here. Not sure why, but I’m not complaining!
Pumpkin is the one veggie I’m willing to have from a can – so good, especially with cream cheese!
Those waffles sound absolutely amazing! Do you have any recommendations on the perfect waffle maker? I’ve been in the market for one, but there are so many to choose from!

It cooks evenly, quickly, is light and easy to store. It’s nonstick but you HAVE to spray ALL waffle irons with nonstick spray to work. It even fell of the top of my fridge on to ceramic floor and still works great (with a few dents). It takes maybe three minutes to clean with a soapy cloth and dry towel. I lovelovelove it!

I’m so glad you’ve been able to keep cooking!! I can’t stand being in the kitchen cause I can’t taste anything properly…I just cook what gets me through LOL. I’m SO looking forward to having my taste buds back!!
I’m scared of losing my tastebuds too! I feel like mine have “dulled” a little since I started my new chemo regimen. Is it a result of the Prednisone or the chemo drugs? It is so cruel to gain weight AND not be able to taste the yummy things that should come with weight gain…

I wish my dad had been around to take the candy away from me yesterday…and I’m 31. My stomach was not so happy this morning…too many Coffee Crisps. They make a nice light snack after all…
You just made me realize I put “Coffee Crunch” by accident in the post. Whoops. Chemo brain strikes again. But more importantly, have you ever tried eating them out of the freezer? SO good frozen!

WAFFLE WEDNESDAY!!!!!! I despise cream cheese but agree with your sentiment about canned pumpkin. Last year we froze roasted pumpkin in batches, actually I think might still have 1 bag left and it’s been a whole year! My mom and I mostly use it to make muffins but I also got some pumpkin pancakes out of it. You look cute in your costume! Carpe diem and shit!

You and your sister look like two superheroes in your costumes. Great story about eating too much chocolate at the end. I had 6 kids at my door on Haloween so I’m trying to make whats leftover last. You can imagine how that is going;)

Hooray for waffle Wednesday! I honestly can’t remember the last time I made waffles for breakfast. I need to break this record immediately. I never think to add club soda to recipes, but I bet it made this one even more delicious!

I was saved from eating too much Halloween candy despite the lack of trick or treater’s because we had a party for Monday Night Football and I forced our guests to take the leftovers. It was a smart choice.
